Apricot Salad Dressing

Apricot Poppyseed salad - a healthy and refreshing blend of greens, fruits and nuts. 

Serves: 6-8 · Prep Time: 5 Minutes · Total Time: 5 Minutes

Ingredients

Dressing:

  • 60g St. Dalfour Apricot Fruit Spread
  • 2 tbsp Apple Cider Vinegar
  • 1 tbsp Extra Virgin Olive Oil
  • 2 tsp Dijon Mustard
  • 1⁄2 tsp Poppyseeds
  • Salt & Black Pepper to taste

Salad:

  • Kale, chopped
  • Rocket
  • Avocado, sliced
  • Parmesan cheese, grated
  • Pomegranate seeds
  • Honeycrisp apples, sliced
  • Brussels sprouts, shaved
  • Pecans, crushed

Instructions

  1. Whisk ingredients for dressing in a small bowl.
  2. Add 2-3 tbsp of water until desired thickness.
  3. Toss kale, rocket, and shaved Brussels sprouts together in a large serving bowl.
  4. Add salad dressing to toss once more, then top with remaining salad ingredients.
